VMware Converter is primarily used to convert whole systems. If you have the data on the "old" DC, then I'd consider to use a tool like robocopy to migrate the data and create the shares manually. Migrating the data by coping them to the Windows 2008 VM also takes care of the "misaligned" partitions in Windows 2003 (63 blocks = 31.5kB), since Windows 2008 and newer create properly aligned partitions (2,028 blocks = 1MB), which makes a difference in disk performance.
