I would suggest some changes...

 

- NFS are good. You need redundancy for NFS as it is your most important piece of the infrastructure.

- I would move vMotion the the vSwitch2, with NFS, and place vmnic1 as active for NFS and standby for vMotion, and vmnic3 as active for vMotion and standby for NFS. This way you have redundancy for NFS and vMotion will not mess with anything. Unless you have Etherchannel or LACP, two active nics will not add any performance for NFS, and more if your environment is not heavy.

-You can do the same active/standby scenario for vSwitch1,separating Mgmt from VMs, but keeping redundancy.
